This, my friends, is a delicious Quiche Lorraine, recipe courtesy of Laura Calder’s French Food at Home. We did add some onions and mushrooms to it, but the secret to its deliciousness is really in the creme fraiche. In the online recipe it says only “heavy cream,” but don’t believe it! On the tv show Ms. Calder uses creme fraiche, and after tasting her recipe, I am convinced that this was the secret to the superiority of my Parisienne former coworker’s quiche. Up until today I had never tasted a quiche that tasted quite like that!
“What exactly is creme fraiche, though?” you may ask. “Where do you get it? I thought you said that you live in the middle of nowhere!” Well stay tuned, because sooner rather than later I will divulge the secret of how to make your very own creme fraiche! It’s a pretty dangerous thing to know, as this ingredient makes all sorts of things much tastier, but also more unhealthy. I guess you can’t have it all!
